About us

We started from a problem nobody was solving

The best Italian food is the food that lasts the least. Burrata, stracciatella, mozzarella: products the world asks for and cannot receive, because their commercial life ends before the journey does.

Where it beginsBurrata closed by hand, the way it has always been done. Our work starts here.

The problem

Two worlds that never meet

On one side, the producersSmall companies making an excellent product and selling it within a hundred kilometres. They have no export structure: not the paperwork, not the logistics, not a commercial office abroad.

On the other, the buyersImporters, chains and food service who would take that product, and who are told it does not travel. Or who receive it at a cost no margin can absorb.

What is missing in between is an infrastructure. Tabula Italia is that infrastructure.

The answer

A hub, not a middleman

A middleman buys and resells. A hub transforms: it takes the product where it is made, puts it in a condition to travel, and delivers it with everything needed to sell it somewhere else.

Plants, not warehouses

The product is processed and frozen in certified facilities, not simply stored and resold.

A network of producers

Companies selected one by one, which stay artisan and become exportable. The catalogue grows with them.

Paperwork ready

Technical sheets, analysis, pallet data and customs references. What a buyer usually has to chase is already written here.

Next step

How we do it, in practice

Four things: the technology that makes fresh food shippable, the selection of producers, temperature-controlled logistics and commercial support.
